Mix together the flour, discard, salt, oil, and brown sugar in a mixer
Mix until the dough is smooth
Place dough in an oiled bowl and cover for an hour or until doubled in size
Separate dough into 8 sections
Roll each section into logs and cut into bites
Place on a parchment lined baking sheet and cover for an hour
Preheat oven to 400 degrees
Boil the water and baking soda together and reduce heat to a simmer
Simmer dough bites for 30 seconds before returning them to the baking sheet
Optional: beat egg and brush egg wash on the dough bites
Top with course salt
Bake for 15 to 20 minutes
Repeat until all the bites are baked
Enjoy warm and/or with dipping sauce!
