With the flat attachment, mix all the ingredients in your Kitchenaid mixer
Once the dough starts to come together, switch to the dough hook
Mix until it is a smooth dough
It will seem very dry when you start, but it will come together
Let the dough rest for at least 30 minutes
Attach the pasta roller attachment to your Kitchenaid mixer
Set the speed to 4 and add a little flour
Add Semolina flour to a bowl and set aside
Set the roller to 8 and grab about 2 tbsp of pasta dough
Press the dough into a disk that fits in the roller and pass it through
Keep passing it through and drop the number one at a time until you reach number 4
Pass the pasta sheet through one of the pasta cutters and allow it to drop directly into the bowl with Semolina flour
Toss to coat the noodles
Set them aside and repeat
You can freeze the noodles and then cook in boiling water for about 5 minutes or until they float
Or you can cook right away for about one minute or until the noodles float
