Simple Homemade Noodles with A Kitchenaid Attachment

Equipment

  • Kitchenaid Mixer
  • Pasta roller I used the kitchenaid attachment linked above

Ingredients
  

  • 2 Cups All-Purpose Flour
  • 3 eggs
  • 1 tbsp Olive Oil
  • 1/2 tsp Salt

Instructions
 

  • With the flat attachment, mix all the ingredients in your Kitchenaid mixer
  • Once the dough starts to come together, switch to the dough hook
  • Mix until it is a smooth dough
  • It will seem very dry when you start, but it will come together
  • Let the dough rest for at least 30 minutes
  • Attach the pasta roller attachment to your Kitchenaid mixer
  • Set the speed to 4 and add a little flour
  • Add Semolina flour to a bowl and set aside
  • Set the roller to 8 and grab about 2 tbsp of pasta dough
  • Press the dough into a disk that fits in the roller and pass it through
  • Keep passing it through and drop the number one at a time until you reach number 4
  • Pass the pasta sheet through one of the pasta cutters and allow it to drop directly into the bowl with Semolina flour
  • Toss to coat the noodles
  • Set them aside and repeat
  • You can freeze the noodles and then cook in boiling water for about 5 minutes or until they float
  • Or you can cook right away for about one minute or until the noodles float
