Equipment

  • 1 KitchenAid with Ice cream attachment

Ingredients

  • 2 cups of blackberries
  • ½ cup of sugar add up to a cup if you like very sweet ice cream
  • 1 cup whole milk
  • 1 cup heavy whipping cream
  • 1 egg yolk
  • 1 tsp vanilla extract

Instructions

  • Make sure your ice cream maker is in the freezer so it can be ready when your mixture is ready
  • In a pot, melt together the blackberries and sugar
  • Smash the blackberries as much as you can while mixing
  • You can also use a blender, but that isn’t needed
  • Add your milk, cream, and egg yolk
  • Bring to a simmer (do not allow it to boil)
  • Simmer for about 5 minutes
  • It will get foamy on top
  • Strain your mixture through a fine metal mesh strainer to get the blackberry chunks and seeds out
  • I like my ice cream smooth so I strained twice to make sure I got it all
  • Add the vanilla extract and mix
  • Place the mixture in a container and chill until it is cold
  • The colder the mixture, the better
  • When it is cold and your ice cream maker is frozen, set up your ice cream maker and churn according to the directions
