Pretzel bites are a fun and delicious snack that never lasts long
While they do take a little time, they are easy to make
How long are soft pretzel bites good for?
These sourdough Discard pretzels are homemade without preservatives
So it is expected that they will not last long
They are good for 3 days at room temperature, 1 week in the refrigerator, or 3 months in the freezer
Also, keep in mind that humidity will affect the salt on the pretzels
It got humid in the bag that I stored my first batch in and the salt dissolved
Can you Reheat soft pretzel bites?
Yes! You can put them back into a 350 degree oven for 5 minutes to reheat
Avoid using the microwave because they will either get hard or soggy
What are the best dips for soft pretzels?
The most common dip for pretzels is cheese sauce
But there are other options too
Some people like to dip pretzels in mustard, chocolate, or even spinach artichoke dip
Have fun and get creative
We also just like eating the pretzel bites alone
Ingredients:
1 cup warm milk
1 cup sourdough discard
2 ¼ tsp instant yeast
2 tbsp brown sugar
2 tsp coarse salt plus more for topping
4 cups flour
2 tbsp Olive oil
9 cups of water
½ cup baking soda
For browner pretzels: 1 egg for egg wash
Instructions:
Start by adding the milk, discard, yeast, brown sugar, salt, flour, and oil to a mixer
Using the dough hook, knead until the dough is smooth
Place the dough in an oiled bowl for an hour in a warm place to rise
Once the dough has doubled in size, cut it into 8 pieces
Roll each piece into a log and cut it into bite size pieces
Place all the pieces on a parchment lined baking pan and cover for another hour
Boil the water and baking soda together
Preheat the oven to 400 degrees
Simmer all the pretzel pieces for 30 seconds
Once they are simmers and returned to the baking pan, sprinkle course salt on top
If you want brown pretzels, top with egg wash
Bake the pretzels for about 15 minutes
Repeat until all the dough is cooked
Enjoy with some cheese or by itself!
Sourdough discard soft pretzel bites
Ingredients
- 1 Cup Flour
- 1 Cup Sourdough discard
- 2 1/4 Tsp Instant yeast
- 2 Tbsp Brown sugar
- 2 Tsp Course salt Plus more for topping
- 2 Tbsp Olive oil
- 1 Pot Water
- 2 Tbsp Baking soda
- 1 Egg
Instructions
- Mix together the flour, discard, salt, oil, and brown sugar in a mixer
- Mix until the dough is smooth
- Place dough in an oiled bowl and cover for an hour or until doubled in size
- Separate dough into 8 sections
- Roll each section into logs and cut into bites
- Place on a parchment lined baking sheet and cover for an hour
- Preheat oven to 400 degrees
- Boil the water and baking soda together and reduce heat to a simmer
- Simmer dough bites for 30 seconds before returning them to the baking sheet
- Optional: beat egg and brush egg wash on the dough bites
- Top with course salt
- Bake for 15 to 20 minutes
- Repeat until all the bites are baked
- Enjoy warm and/or with dipping sauce!
