I love pasta, but I didn’t realize just how lacking storebought noodles were until I made my own

I got a KitchenAid pasta roller attachment for Mother’s Day and tried homemade spaghetti for the first time and I will never go back

I can easily eat half of a box of dried pasta from the store, and even a whole box if I am hungry

It just doesn’t fill me and keep me full

But I ate a single bowl of spaghetti using homemade noodles because it actually has nutrition

What does the Kitchenaid attachment do?

The Kitchenaid attachment makes rolling the pasta way faster and more even

Noddles have to be rolled very thin, and the dough is very stiff

That makes rolling it by hand way harder

You can use a manual pasta roller too, but I prefer using the Kitchaid one since it is so much easier

Why does the dough have to rest?

It takes time for the egg and oil to really fuse with the flour

The 30 minutes of rest time gives the dough time to fully fuse together and gives the pasta a much better texture

Why is the dough so tough?

It is important for there to be low moisture in pasta dough so that it rolls better and keeps its shape when you cook it

What do I do if the dough is sticking to the roller?

If your pasta dough is sticking to the roller, add some flour to the surface of the dough and to the rollers to prevent more sticking

How do I keep the pasta from sticking once it’s cut?

Once the pasta is cut, it will start to stick back together if you let it

I add Semolina flour to a bowl and then catch the pasta in that bowl as it is getting cut

You can not use all-purpose flour because the pasta dough will just absorb it and stick together anyway

Semolina flour doesn’t get absorbed by the dough and falls off better when you cook your noodles

How do I store homemade pasta?

I like to twist the noodles into nest shapes and then freeze them 

It takes about 5 minutes to cook frozen noodles

But I plan on trying to dehydrate and freeze-dry these noodles as well

Ingredients:

2 cups of all-purpose flour

3 eggs

1 tbsp olive oil

½ tsp salt

Instructions:

With the flat attachment, mix all the ingredients in your Kitchenaid mixer

Once the dough starts to come together, switch to the dough hook

Mix until it is a smooth dough

It will seem very dry when you start, but it will come together

Let the dough rest for at least 30 minutes

Attach the pasta roller attachment to your Kitchenaid mixer

Set the speed to 4 and add a little flour

Add Semolina flour to a bowl and set aside

Set the roller to 8 and grab about 2 tbsp of pasta dough

Press the dough into a disk that fits in the roller and pass it through

Keep passing it through and drop the number one at a time until you reach number 4

Pass the pasta sheet through one of the pasta cutters and allow it to drop directly into the bowl with Semolina flour

Toss to coat the noodles

Set them aside and repeat

You Can freeze the noodles and then cook in boiling water for about 5 minutes or until they float

Or you can cook right away for about one minute or until the noodles float
