It is the time of year when blackberries are in abundance
We had a lot of blackberries that were about to go bad, so I made them into ice cream!
This is a very sweet ice cream that is a beautiful purple color
The first time I made it, I used the full cup of sugar in the simple syrup
But a half cup is better for me since it was just way too sweet
But you can adjust that to your preferences!
How long does it take to churn using the Kitchenaid attachment?
Every mixture is going to be a little different, and your freezer temperature makes a difference too
But it takes me about 30 minutes to make most ice cream recipes with my freezer set to 0 degrees
How do you put the Kitchenaid ice cream attachment on?
The Kitchenaid ice cream attachment is a tension-based system
You look at the piece with a spring and push it on your Kitchenaid mixer so the “A” or the arrow is facing the spot you add attachments
Then you put the frozen ice cream bowl on just like the regular bowl
Put the churning attachment inside and lift the bowl(or lower the mixer) so the two white pieces are together
The pressure will make it so the mixer will turn the churning attachment inside
Can I use other fruits in this recipe?
Yes!
I have a few different fruits that I want to try this with
But basically you are making a fruit simple syrup and adding milk and cream so you can make ice cream
Ingredients:
2 cups of blackberries
½ cup of sugar (add up to a cup if you like very sweet ice cream)
1 cup whole milk
1 cup heavy whipping cream
1 egg yolk
1 tsp vanilla extract
Instructions:
Make sure your ice cream maker is in the freezer so it can be ready when your mixture is ready
In a pot, melt together the blackberries and sugar
Smash the blackberries as much as you can while mixing
You can also use a blender, but that isn’t needed
Add your milk, cream, and egg yolk
Bring to a simmer (do not allow it to boil)
Simmer for about 5 minutes
It will get foamy on top
Strain your mixture through a fine metal mesh strainer to get the blackberry chunks and seeds out
I like my ice cream smooth so I strained twice to make sure I got it all
Add the vanilla extract and mix
Place the mixture in a container and chill until it is cold
The colder the mixture, the better
When it is cold and your ice cream maker is frozen, set up your ice cream maker and churn according to the directions
If you are using a Kitchenaid ice cream maker, that will be about 30 minutes
Transfer to your ice cream container
You can eat it as a soft serve ice cream or freeze it for at least 2 hours to make it firmer
