On my journey to becoming more self sufficient cereal was one of the things I was nervous about

It had to be time consuming to make something so small

Thankfully, corn flakes and frosted flakes are an easy start!

Frosted flakes are just cornflakes with a sugar coating

So you can choose which one you want by only changing the end

Are frosted flakes healthy?

The actual frosted flakes has a lot of weird ingredients, but you can use this recipe to make a pretty healthy version

It would be healthier as corn flakes but the extra sugar is nice to taste!

My frosted flakes have only 4 ingredients, and 3 of them are good for you!

What is the coating on frosted flakes?

The coating on frosted flakes that make the cereal frosted flakes instead of corn flakes is sugar

I use powdered sugar but you can use simple syrup as well

What can I add to the recipe?

This is a fun base recipe. 

You can add more to it if you want!

You can add things like freeze dried strawberries

Or other fruit

Try things out and see what you like!

Ingredients:

½ cup cornmeal

½ cup sourdough discard

2 tbsp honey

Water if needed

2 tbsp powdered sugar

Instructions: 

Start by preheating your oven to 350 degrees and lining a baking sheet with parchment paper

Mix the cornmeal, Sourdough discard, and honey together in a bowl

You want it thin enough to easily spread onto the baking sheet

Add a little water at a time until you have a pancake consistency 

Spread the mixture as thin as possible onto the baking sheet

You want this super thin!

Bake for 10 minutes

Remove the pan from the oven and tear the big sheet into bite size flakes

Reduce the oven temperature to 275 degrees and bake for 40 minutes

They will be slightly soft when they are warm but will harden when cooled

Lightly coat the corn flakes with the powdered sugar while they are hot

Allow the cereal to cool before storing in a jar

Add to a bowl of milk just like any other cereal!

Frosted Flakes with Sourdough Discard

Cook Time 50 minutes
Total Time 55 minutes

Ingredients
  

  • 1/2 Cup Cornmeal
  • 1/2 Cup Sourdough discard
  • 2 Tbsp Honey
  • Water As needed
  • 2 Tbsp Powdered sugar

Instructions
 

  • Preheat the oven to 350 degrees
  • In a bowl, mix the cornmeal, sourdough discard, and honey together
  • If it is too thick to easily spread thinly, add water
  • Line a baking sheet with parchment paper
  • Spread the cornmeal mixture as thin as possible on the baking sheet
  • Bake at 350 for 10 minutes
  • Remove baking sheet and tear apart the mixture. It will be like a sheet
  • Tear into bite size pieces
  • Reduce oven temperature to 275 degrees
  • Baking for 40 minutes to finish drying the flakes
  • They will seem a little soft still while warm
  • Lightly coat the flakes with powdered sugar
  • Allow to fully cool before storing in a jar
  • Eat with milk like any other cereal!
