Apple fritters are a favorite for my family and extended family!

I created this recipe when my brother asked that I pay him in apple fritters instead of money 

It is very yummy with a hint of sourdough 

What are apple fritters made of?

Apple fritters are a wet batter before they are fried

They are made with flour, sweetener, seasoning, apple, and egg mainly

But I add sourdough discard to mine!

Are apple fritters donuts or pastries?

Apple fritters are a donut

They are fried the same way donuts are and topped with icing

While they are different looking than donuts, they would be classified as a donut

Are apple fritters healthy?

Apple fritters have apples in them, but they are not considered healthy.

I make mine a little healthier by using honey instead of sugar and by adding sourdough discard

But they are still deep fried

I use peanut oil to make that a little better, but it is still not considered healthy

Why are my apple fritters soggy?

Apple fritters should not be soggy after frying

If they are, then they were probably too big or the oil was too hot

If the outside fully cooks before they have a chance to cook on the inside, then they will be doughy on the inside when you take them out of the oil

What does baking soda do in fritters?

there is a slight fluffiness to apple fritters

That means they need a something to give that lift

Baking soda is a great choice for anything that cooks fast, like pancakes or fritters 

Without the baking soda, the apple fritters would be flat and wouldn’t fluff while cooking

Ingredients:

1 cup of flour 

1 cup sourdough discard

¼ cup honey

2 tsp baking powder

½ tsp salt

1 ½ tsp cinnamon

2 eggs

2 cups of apple pulp from making juice

If you don’t want to make juice:

¼ cup apple sauce 

2 diced apples

Oil for frying

Icing:

1 cup of powdered sugar

2-3 tbsp heavy cream or milk

¼ tsp vanilla

Instructions:

Start with a mixer or a bowl and combine everything except the apple, icing, and oil

Once that is mixed, add the apple and combine

The batter will be wet and sticky

Heat frying oil to 325 degrees

Take a heaping ¼ cup of batter, flatten it into a disk, and gently place in hot oil

Repeat until you can’t comfortably add more batter disks to the oil

Don’t overcrowd the fritters

Fry for a minute or so on each side until a deep golden brown

The inside should read 200 degrees

Remove the fritters from the oil and place on a paper towel lined plate

Repeat until all the batter is gone

Allow the apple fritters to cool before adding the icing

To make the icing, put 1 cup of powdered sugar in a clean bowl and slowly add the heavy cream or milk until you get a thick icing and there is no powder left

Dip the cooled apple fritters in the icing with a small twist

Allow the icing to dry for 1-2 hours or enjoy right away!

Sourdough Discard Apple Fritters

Equipment

  • Fryer or wide pot

Ingredients
  

  • 1 Cup Flour
  • 1 Cup Sourdough discard
  • 1/4 Cup Honey
  • 2 Tsp Baking powder
  • 1 1/2 Tsp Cinnamon
  • 2 Eggs
  • 2 Cups Apple pulp Or 1/4 cup apple sauce and 2 diced apples

Icing

  • 1 Cup Powdered sugar
  • 2-3 Tbsp Heavy cream or milk
  • 1/2 Tsp Vanilla extract (Optional

Instructions
 

  • First you need to prepare the apple pulp. I use fuju apples to make juice and use the leftover pulp for this recipe
  • If you don't want to do that, use 1/4 cup apple sauce and 2 diced apples
  • Add all ingredients except the apple and icing ingredients to a mixer and mix well
  • Add apples and combine
  • Heat frying oil to 325 degrees
  • Batter will be wet and sticky
  • Flatten a heaping 1/4 cup of batter into a disk shape and add to fryer
  • Add more to oil but don't overcrowd the fryer
  • Cook for a a minute each side or until a dark golden brown color
  • Internal temperature of the apple fritters should be 200 degrees
  • Remove from oil and place on a paper towel lined plate to cool
  • In a clean bowl, mix powdered sugar, heavy cream or milk, and vanilla
  • Dip the apple fritters in the icing and twist to coat the top
  • Allow icing to dry for an hour and enjoy!
