One of my favorite ways to expand what I cook from home is by paying attention to what I buy

Pizza and frozen pizza was a regular for our home

While I am not a huge pizza fan, my husband LOVES pizza

And he always wanted the expensive frozen pizzas that were $12 a piece and he could eat by himself of he wanted to

So I started working on my own homemade pizza and frozen pizza

Then that expanded to learning microwave pizza as well

Now we spend way less on those convenience meals, they are healthier, and they are fully customizable! 

Ingredients:

For dough:

1 cup Sourdough discard

2 ¼ tsp Instant yeast

1 ½ tsp Honey 

1 ⅓ cup Flour

¼ cup Warm water

2 tbsp Olive oil + a little more 

¾ tsp Salt

For pizza:

Tomato sauce

Salt

Garlic powder

Italian seasoning

Paprika

Cayenne pepper

Mozzarella cheese

Optional: Sharp cheddar cheese

Toppings of your choice (I use pepperoni, bacon, and cowboy candy)

This is completely customizable! 

Instructions:

Add water, yeast, and honey to a stand mixer and wait 5 minutes 

You should have foam covering the top to show the yeast is active

Add all other ingredients and mix until the dough is smooth

It should be easy to hand but still lightly stick to the bottom of the mixer bowl

Put the dough in an oiled bowl and let rise until doubled in size

If your house is not warm, turn your oven on for a few minutes then shut it off and put the bowl inside for an hour

This is a lifesaver for me during the winter! 

Once the dough is double the size, cut it in half for two pizzas and roll it out onto parchment paper 

Turn oven on to 400 degrees

The thickness is completely up to what you like! 

In a separate pan or bowl, make the pizza sauce with the tomato sauce and seasonings

I don’t measure my seasons and just add to taste

Put enough sauce on the dough to cover without it being soggy

Add mozzarella cheese on top

Now it’s time to have fun with toppings! 

Once it is put together. You can either cook both for 25-30 minutes or put one on a plate in the freezer

If I am freezing a pizza, I wait overnight for it to be frozen fully before removing the pizza with the paper and covering it in foil or putting it in a freezer-safe bag

You can also make microwave pizza by separating the dough into 6 instead of 2

Then make the mini pizzas the same way and fully cook them

Once they are cooked, freeze fully and store in a bag or in foil

When you are ready to eat, remove foil and put on a plate before microwaving for 1-1 ½ minutes to reheat


Can I freeze prepared pizza?

Yes! You can freeze the pizza and make your own freezer pizzas

I do this every time 

I almost always double the dough recipe so I can cook 2 pizzas and freeze 2 pizzas

To make freezer pizza, fully make the pizza as described above 

But instead of putting it in the oven, put it on a tray or a plate before putting it in the freezer overnight

Once fully frozen, cover the pizza in foil or add it to a freezer-safe bag

Then you can make it frozen when you are ready! 

Just preheat the oven to 400 degrees and cook the pizza for 30-40 minutes

Can I microwave pizza?

Another fun way to prepare these pizzas is by making them microwave pizzas

This is great if your family likes microwave meals for lunch

For this, separate the dough into 6 pieces instead of 2

Then prepare exactly as above and fully bake them

I can bake 3 at a time on my cast iron pan

Once baked and cooled, freeze the mini pizzas fully and put them in a bag or cover with foil

When you are ready to eat, remove all foil and place on a plate

Then microwave for 1-½ minutes until filly reheated 

Then enjoy! 

PS: the crust will not turn out right if the microwave pizzas aren’t cooked before freezing so don’t skip that step
