I am not a big marshmallow fan, but these are delicious!

I originally planned on making marshmallows to make rice krispie treats with, but I didn’t make the cereal in time

So we made smores!

And they were amazing

They didn’t catch on fire when placed In the campfire

They just caramelized 

I will never buy Marshmallows again!

What makes Marshmallows fluffy?

Marshmallows are fluffy because they are whisked at high speed for a long time

This adds a lot of hair to the sugar

When the sugar sets, that air makes it fluffy

What is the difference between marshmallow fluff and marshmallow?

The difference between marshmallow and marshmallow fluff is that marshmallows have gelatin that makes them firm

Without the gelatin, sugar stays soft

What are Marshmallows coated in?

To prevent sticking, marshmallows are coated in cornstarch, powdered sugar, or a mix of both

Both of them dry out the outside of the marshmallow so they are able to be handled and to prevent them from sticking to each other and everything else.

Ingredients:

½ cup water (separated)

.75 oz of gelatin 

2 cups sugar

⅔ cup corn syrup

1 tbsp vanilla extract

½ cup powdered sugar

½ cup corn starch

Instructions:

Mix ¼ cup of water and the gelatin together in a mixer

You don’t need to use the mixer, just lightly combine

In a pot or pan, Bring the sugar, corn syrup, and ¼ cup of water to a boil

Boil hard for 1 minute

The goal is to being the sugar up to 240 degrees

Don’t overcook!

Immediately pour the sugar mixture in the mixer with the gelatin

Using the whisk, mix on medium high or high for 12 minutes

There will be a lot of steam!

Prepare a 8×8 pan with plastic wrap and spray the plastic with cooking spray

Add the vanilla extract to the mixer right before it finishes the 12 minutes 

Put the marshmallow into the prepared pan

Spray another sheet of plastic wrap with cooking spray and cover the marshmallow

Make sure that the marshmallow is evenly spread and allow it to rest for at least 4 hours 

When it is set, mix the powdered sugar and cornstarch together on a plate

Spray a knife or scissors with cooking spray and cut the set marshmallow into 2 inch squares

Roll the squares into the powder to coat every side

Store the marshmallows in an airtight container and enjoy!

Homemade Marshmallows – Perfect for Smores!

Prep Time 20 minutes
Cook Time 5 minutes
Rest time 4 hours
Total Time 4 hours 25 minutes

Equipment

  • 1 Electric mixer
  • Plastic wrap

Ingredients
  

  • 1/2 Cup Water Separate
  • . 75 Oz Gelatin
  • 2 Cups Sugar
  • 2/3 Cup Corn syrup
  • 1 Tbsp Vanilla extract
  • Cooking spray
  • 1/2 Cup Powdered sugar
  • 1/2 Cup Corn starch

Instructions
 

  • Add 1/4 cup of water and gelatin to a stand mixer or a bowl for a hand mixer
  • Let sit while you prepare the sugar
  • In a pot or a pan, bring 1/4 cup water, sugar, and corn syrup to a boil
  • Boil hard for 1 minute or until 240 degrees
  • Do not overcook!
  • Immediately add the sugar mixture to the bowl with the gelatin
  • Using a whisk attachment,mic on high or medium high for 12 minutes
  • Add the vanilla right before the 12 minutes is done
  • Spray plastic wrap with cooking spray and line a 8×8 baking pan
  • Pour the marshmallow into the prepared pan
  • Spray more pastic wrap and cover the marshmallow while pressing it evening in the pan
  • Leave covered and let rest for at least 4 hours
  • Spray a knife or scissors with cooking spray
  • On a plate, mix the powdered sugar and corn starch
  • Cut the marshmallow into 2 inch squares and coat all sides with the powder
  • Store in air tight container for up to 7 days
