I am a busy woman, so making easy freezer meals is a must in my life
One of my favorite breakfasts is hashbrown and egg bites
They are so easy and you can add whatever you want to them
When I am ready to eat, they are heated in less than 2 minutes in the microwave
Can you make egg bites and freeze them?
Yes!
Egg bites are perfect for freezing and reheating
All I do is add my fully cooked egg bites to a freezer bag in a single layer before placing in the freezer
They freeze fast and can even be moved to a new bag once frozen without needing to be in a single layer
They keep perfect for about 3 months in the freezer, but they never last that long in my home
How do you Reheat frozen egg bites?
When you are ready to eat the egg bites, Place them on a microwave safe plate in a single layer
Then microwave for 1-1.5 minutes
Allow them to cook for a minute or so before eating
It is super easy and they are great if you are walking out the door
Why are my egg bites watery?
If you think you have fully cooked the egg bites and they are watery then they could be undercooked or have too much water
You can get too much water by adding too many vegetables to the egg
If they are just undercooked then that is an easy fix
Just keep them in the oven an extra 5 or 10 minutes
But if they are watery from added vegetables, there isn’t a lot that you can be except learn for next time
Why are my egg bites rubbery?
Egg bites become rubbery when they are overcooked in high heat
Think of hard boiled eggs
If this happens to you, try reducing the heat and making sure you remove them from the oven before they become overcooked
Ingredients:
3 hashbrown patties
4 large Eggs
1 tbsp heavy cream
Seasonings of choice(I use salt, paprika, garlic, and onion powder)
½ cup shredded cheddar cheese plus some for topping
Instructions:
Start by spraying a cupcake pan or silicone mold with nonstick spray
I use this silicone mold
Preheat oven to 350 degrees
Add a half hashbrown pattie to each spot
In a bowl, beat the eggs, seasonings, and cheese together
Add egg mixture to the spots
Top with some more cheese
Cook egg bites in the oven for 20-30 minutes
To check if they are done, poke the egg with a toothpick
It shouldn’t be runny at all
It may be soft while it’s hot, but it won’t be runny
Allow to cool before removing from the molds to eat or freeze
Hashbrown and egg bites
Ingredients
- 3 Hashbrown patties
- 4 Large eggs
- 1 Tbsp Heavy cream
- Salt, paprika, garlic powder, onion powder To taste
- 1/2 Cup Cheddar cheese Plus more for topping
Instructions
- Preheat oven to 350 degrees
- Spray molds or cupcake pans with nonstick spray
- Add a half hashbrown pattie to each spot
- Beat all other ingredients together
- Add veggies if wanted
- Add egg mixture to each mold spot
- Top with more cheese
- Bake for 20-30 minutes until egg is not runny
- Cool before removing the egg bites to eat or freeze
